Επιπλέον ολοκλήρωσε με επιτυχία το Πρόγραμμα Εξειδίκευσης στις Διατροφικές Διαταραχές και την Παχυσαρκία (Master Practitioner Programme in Eating Disorders & Obesity) στο Κέντρο Εκπαίδευσης και Αντιμετώπισης Διατροφικών Διαταραχών (ΚΕΑΔΔ), υπό την αιγίδα του Εθνικού Κέντρου Διατροφικών Διαταραχών της Μεγάλης Βρετανίας (NCFED). Παρακολούθησε το επιμορφωτικό σεμινάριο: "Ειδικός Αθλητικής Διατροφής" της επιστημονικής ομάδας του Εργομετρικού Κέντρου Διατροφής & Άσκησης "Peak Performance", καθώς επίσης και το Εκπαιδευτικό Σεμινάριο "Διαιτητικό σχήμα FODMAPs" της επιστημονικής ομάδας του epimorfosi.eu. Από τότε μέχρι και σήμερα δραστηριοποιείται ενεργά στον τομέα της διατροφής με εκπαιδευτικές εισηγήσεις σχετικά με την διατροφική εκπαίδευση σε ομάδες παιδιών και αθλητικών συλλόγων κυρίως στην περιοχή της Έδεσσας. Από το 2019 διατηρεί το προσωπικό της γραφείο "maΤ.Nutrition" στην Έδεσσα και από το 2025 πραγματοποιεί ραντεβού και στην Αθήνα. Η κ. Ματάτση "Πιστεύει πως η ισορροπημένη διατροφή είναι η αλλαγή του τρόπου ζωής και όχι απλά ένα “μαγικό” χαρτί, που θα σε κάνει αδύνατο ή μυώδη.
