H Θεοκλήτη Παπαδάκη είναι Χειρουργός Οφθαλμίατρος. Έλαβε τον τίτλο ειδικότητας της Οφθαλμολογίας το 2001. Κατά την παραμονή του στις ΗΠΑ, o κος Σαϊτάκης συμμετείχε με εργασίες στο Συνέδριο Νευρο-Οφθαλμολογίας της Βορείου Αμερικής (NANOS) και ανέλαβε ερευνητικά projects στο πεδίο της νευρο-οφθαλμολογικής προσβολής στην ‘’IgG4-related disease’’, συνεργαζόμενος με τον φημισμένο καθηγητή Ρευματολογίας του Πανεπιστημίου του Harvard, Dr John Stone.
