Ο Σαϊτάκης Γιώργος είναι Χειρουργός Οφθαλμίατρος με ιδιωτικό ιατρείο στη Νέα Ερυθραία. Εισήχθη στην Ιατρική Σχολή του Εθνικού και Καποδιστριακού Πανεπιστημίου Αθηνών κατόπιν Πανελληνίων εισαγωγικών εξετάσεων. Εν συνεχεία, το ακαδημαϊκό έτος 2019-2020, εξειδικεύτηκε στον τομέα της Νευρο-Οφθαλμολογίας (διάρκεια Fellowship 1 έτος) ως προσκεκλημένος Neuro-Ophthalmology International Fellow στο Πανεπιστήμιο του Harvard, στο νοσοκομείο Massachusetts Eye and Ear Infirmary, στην Βοστώνη των ΗΠΑ, υπό την καθοδήγηση των παγκοσμίου φήμης καθηγητών Νευρο-Οφθαλμολογίας του Πανεπιστημίου Harvard, Dr Joseph Rizzo III και Dr Dean Cestari.
