Η Εύα Καρανίκκη είναι Κλινική Διαιτολόγος – Διατροφολόγος, πτυχιούχος του Τμήματος Επιστήμης Διαιτολογίας - Διατροφής Χαροκοπείου Πανεπιστημίου, από το οποίο αποφοίτησε με υποτροφία. Ασκεί το επάγγελμα από το 2017, διαθέτοντας σημαντική εμπειρία τόσο σε κλινικό όσο και σε ιδιωτικό επίπεδο.

Είναι αριστούχος του μεταπτυχιακού προγράμματος ΕΚΠΑ στη Νεοπλασματική Νόσο, ενώ είναι υποψήφια διδάκτωρ στο ίδιο πανεπιστήμιο με αντικείμενο τη θρεπτική υποστήριξη χειρουργικών ασθενών με καρκίνο γαστρεντερικού συστήματος.
