Εισήχθη στην Ιατρική Σχολή του Εθνικού και Καποδιστριακού Πανεπιστημίου Αθηνών κατόπιν Πανελληνίων εισαγωγικών εξετάσεων. Κατά την παραμονή του στις ΗΠΑ, o κος Σαϊτάκης συμμετείχε με εργασίες στο Συνέδριο Νευρο-Οφθαλμολογίας της Βορείου Αμερικής (NANOS) και ανέλαβε ερευνητικά projects στο πεδίο της νευρο-οφθαλμολογικής προσβολής στην ‘’IgG4-related disease’’, συνεργαζόμενος με τον φημισμένο καθηγητή Ρευματολογίας του Πανεπιστημίου του Harvard, Dr John Stone. Είναι κάτοχος του Μεταπτυχιακού Διπλώματος (MSc) «Οπτική και Όραση» του Βαρδινογιάννειου Εργαστηρίου Μεταμοσχεύσεων και Μικροχειρουργικής του Οφθαλμού (IVO) και της Ιατρικής Σχολής του Πανεπιστημίου Κρήτης, αποφοιτώντας από το διετές πρόγραμμα με τον υψηλότερο βαθμό.
