Ο Σαϊτάκης Γιώργος είναι Χειρουργός Οφθαλμίατρος με ιδιωτικό ιατρείο στη Νέα Ερυθραία. Εισήχθη στην Ιατρική Σχολή του Εθνικού και Καποδιστριακού Πανεπιστημίου Αθηνών κατόπιν Πανελληνίων εισαγωγικών εξετάσεων.
